Banana Bread - the only recipe you need

Nothing beats the warm smell of freshly baked banana bread as it comes out of the oven and fills the house with a delicious aroma.


Banana bread is serious business in my household, it's the most requested baked good compared to anything else that I have whipped up in the kitchen.


Everybody has their own banana bread recipe that they swear by and I am sharing mine with you. This is my absolute favourite banana bread recipe, it's one that I've used for as long as I can remember. It's super easy to make, it's moist and delicious, and gets devoured very quickly.

Ingredients:

1/3 cup vegetable or canola oil

1/2 cup white sugar

1/2 cup brown sugar

2 eggs

2 tsp vanilla extract

1 tsp bicarb soda

1/2 tsp salt

1 1/2 cups flour

1/2 cup sour cream (a heaping cup of it)

4 very ripe bananas, mashed (medium-large sized ones)

1 banana, halved lengthwise for decoration


Instructions:

  1. Preheat oven to 180 degrees Celsius. Grease or spray a 9 inch loaf pan, set aside.

  2. In a large bowl, whisk together the oil and sugars. Add the eggs, one at a time and vanilla and whisk until it becomes a smooth mixture.

  3. Add the bicarb soda and salt into the mixture then gradually add the flour, stir to mix until just combined.

  4. Then, add in the mashed bananas and sour cream, gently whisk the mixture until well combined.

  5. Pour batter into prepared pan and place the banana halves in the batter cut-sides up and bake for 60 minutes or until toothpick inserted into the middle comes out clean.

  6. Allow the banana bread to cool before serving (but if you can't wait, it's delicious when eaten warm with some butter or even on its own).
