Who doesn't love waffles? I know I do.
These pandan coconut waffles are slightly crispy on the outside and soft on the inside.
You can eat them on its own, I had mine with a good slather of butter and kaya.
Ingredients (A)
125g plain flour
60g brown sugar
2 tsp baking powder
1/8 tsp salt
Ingredients (B)
1 large egg (well beaten)
1/4 tsp pandan paste
200ml coconut milk
60ml oil
1/4 tsp vanilla extract
Other
non-stick cooking spray
waffle maker
Instructions
In a large bowl, add ingredients A and mix well with a whisk.
Add in ingredients B, whisk until the batter is smooth and let it rest for 5-10 minutes.
Preheat the waffle maker on medium heat setting.
Then, spray the preheated waffle maker with non-stick cooking spray.
Pour in a ladle full of batter into the waffle maker and use a spatula to spread the batter evenly. Close the lid and cook for 4-5 minutes (the cooking time may vary depending on your waffle maker).
Once the waffles are cooked, they should be golden brown with specks of green.
Remove the waffle and transfer to a cooling rack.
