Indulging in soufflé pancakes [スフレパンケーキ] in Japan is an experience like no other—a delightful encounter with clouds of fluffy goodness. These delicious treats, known as ふわふわぷるぷるのパンケーキ (fuwa fuwa puru puru no pankeki), embody the perfect balance of lightness and indulgence.


While exploring Japan, the abundance of soufflé pancake options can leave you spoiled for choice. Here, I share three memorable spots I had the pleasure of visiting:

These soufflé pancakes are the epitome of fluffy and jiggly perfection, one of our favourites on our trip.



Despite our eyes being bigger than our appetites, we dove into three flavours - Crème Brûlée, Matcha Mochi, and Caramel Banana - without a shred of regret (well, maybe just a hint).





Despite the less-than-stellar Google ratings, the combination of exceptional customer service and the sheer excellence of the pancakes left an unforgettable impression on us. Without a doubt, we'll be returning for more when we find ourselves back in Kyoto.



富士山パンケーキ

The name says it all: Fujisan Pancakes - a haven for soufflé pancake enthusiast like myself. Let's face it, mastering the art of soufflé pancakes to perfection is no easy feat.


Their secret? Their unique method involves baking these heavenly treats in a lava kiln, harnessing the volcanic energy of Mt. Fuji itself. This high temperature, rapid baking process yields pancakes that are not just delicious but unbelievably soft and fluffy.



With a delectable blend of mascarpone and ricotta cheese, these pancakes set a new standard for soufflé perfection.




Who would have thought that the pinnacle of soufflé pancake excellence awaited us at the foot of Mt. Fuji?


THE PARK

Opening hours: Monday - Friday (10:00am - 3:30pm), Saturday - Sunday (10:00am - 5:00pm)



When you're cruising through Yamanashi Prefecture, don't miss THE PARK café nestled by the picturesque Lake Yamanaka, offering a breathtaking view of Mt. Fuji.



Our order included both the Ogura & Kinako and Caramel Banana variations.




Renowned for their visually stunning soufflé pancakes, it's hard not to be captivated. However, despite their aesthetic appeal, the flavour of the pancakes doesn't quite live up to expectations. The eggy taste dominates, leaving a somewhat unpleasant feeling after indulging in them.



Benizuru [紅鶴]

Address: 2 Chome-1-11 Nishiasakusa, Taito City, Tokyo 111-0035, Japan

Opening hours: Monday - Sunday (10:00am - 4:30pm)


We were excited about trying out Benizuru in Asakusa, but the idea of lining up at 8:00am just to secure tickets for their 10:00am opening, especially with a toddler in tow, felt less than ideal. Regrettably, we had to pass on it this time.
